Tasting notes

The shrivelled grapes are intensely sweet and full of character producing a wine with a wide array of fruits dried apricots citrus blossom cumquats citrus lime pineapple and mangoes. There is also perfumed passionfruit crab-apple jelly and peachy?botrytis smells. The wine retains about half its natural sugar leaving a beautifully sweet lush wine that has a long mouth-filling Riesling flavours with a marmalade cumquat sweet peach that crescendo with an intensely luscious yet refreshingly clean acidic finish.

Production notes

The 'Botrytis cinerea' (noble rot) fungus encourages water loss from grapes naturally concentrating the remaining sugars acids and flavours. Riesling fruit was hand-picked and gently pressed in an old basket press. Two separate fermentations were undertaken using neutral yeasts to cope with the high natural sugar levels and to avoid dominating the fruit characters. The syrupy juice fermented slowly in stainless steel tanks until the desired level of sweetness was reached. To retain the wine's delicate fruit flavours it was kept in tank rather than barrel before being blended and bottled.
